 This rich and tender lemony almond flavored pound cake uses at least two of the Meyer lemons from my fully loaded potted Meyer lemon tree.  I can't think of a better use of my lemons.  My side yard neighbor has a huge lemon tree covered with lemons all year round, I see it from my kitchen window -which is very nice. I asked him what he does with all his lemons and he told me that each year he donates bags of lemons to a crab feed.  I noticed that he also leaves bags of lemons in front of his house for neighbors.   Look 👀 I saved you a slice of this wonderful lemon tart.  I love this recipe, both for the bright sweet/tart flavor in the simple lemon curd filling made with extra virgin olive oil as well as the tender cookie-like press in tart crust, also made using olive oil.  Just what we need on one of our warm summer days, a slice of homemade lemon tart served chilled from the refrigerator.  I served my tart with a spoonful of crème fraîche on top but whipped cream would also work well.  I also used Meyer lemons 🍋  for the lemon curd filling, which is always a nice option for lemon curd.  I strain my lemon curd which adds an extra step but handily removes any pieces of cooked egg whites to ensure a silky smooth lemon tart filling. Meyer lemon buttermilk pound cake with bright saucy lemon curd

  Attention readers: Today's post is a lemon buttermilk pound cake with lemon curd made using my Meyers.  One dozen medium small size Meyer lemons make a cup of fresh lemon juice, enough for about three cups of lemon curd.  I'm happy about that as I have a drawer in my fridge filled to the top with citrus, mostly lemons that need to be juiced and zested.  Making lemon curd is an annual event, making pound cake is more like semi-annual.  Looking for new lemon pound cake recipes is a casual hobby.  I find cake baking and curd making to be a nice distraction these days, I hope you enjoy my photo and the following recipes.  The lemon curd recipe for the pound cake makes extra (3 cups total) for your toast or as a dessert sauce.  Lemon curd sealed in a sterile canning jar will last several weeks in the fridge.  The Meyer lemon pound cake which is baked in a bundt pan isn't overly sweet while packing lots of lemon flavor, very nice for an afternoon...

Meyer lemon meringue pie with olive oil crust bursting with lemon flavor

  Lemon meringue pie is one of my favorite pies 🥧 Meyer lemons 🍋 from my potted Meyer lemon tree  and Eureka lemons from my backyard neighbor's huge lemon covered tree, work perfectly together to deliver both pucker power and brightness to my lemon meringue pies.  The olive oil crust was a new recipe for me, my go to pie 🥧  crust being all butter and we love it, but the olive oil crust is also a winner.  Olive oil pie crust is a good choice for this lemon meringue pie and while it's not a flaky butter type pie crust, it most definitely has a tender crumb with a rich flavor complementing the pie filling.  We go through bottles of olive oil, where does it all go?  Not just in salads, now I'm using olive oil in cakes and pastry, like, pie crusts-highly recommended.  I adapted this recipe from King Arthur Flour and I'm going to share it with you below 👇 with my instructions for a successful olive oil pie crust. Raspberries and Meyer lemons showing up together here in a cheesecake bar cookie have this thing; it's a lively, tangy, bright and tasty flavor thing, I'm all about loving it and so will you. I love valentines ❤️  day.  The cards, gifts, treats, special dinners with your sweetheart, what's not to like?   Hello spring turns to summer with a bowl of asparagus leek soup, a drizzle of Meyer lemon juice, fresh herbs and edible flowers.  This is an easy delicious creamy soup to make and becomes barely a kitchen project with the addition of Meyer lemon juice, fresh herbs and edible flowers for decoration.  I happen to be a lucky person who has a Meyer lemon tree potted up in my backyard.  These are my lemons and I cherish each one I pick off the tree, making a special effort to put them to good use in my kitchen.  I love to make everything from lemon curd or lemon pie or lemon squares to just using lemon slices in my water or tea.  I also have two mandarin orange trees in pots; they don't take up much space and make a fantastic fruit snack, a reward after a good outdoor walk.  My asparagus leek soup is fragrant and creamy without using any cream.  I use vegetable stock, a bunch of skinny asparagus, one medium leek, unsalted butter, olive oil, sea salt ...

We had our house inspected by the fire department so we could make it safer during wild fire season, which is now several months of the year in California.  One of the suggestions was to remove several large ornamental grasses from the front yard because embers from a wild fire could start a fire inside the grasses and they were all too close to the house.  The large grasses actually die completely back in the winter and were just starting to leaf out again when we ripped them all out, good-bye 👋   The good news is I don't miss the decorative grasses at all but the other news is the front of our house now looks like my Meyer lemon 🍋  olive oil cake photo, very simple, less is more.  Preparing our surroundings for fire season or even just thinking about fire season sucks but lemon cake will help with that.  This cake is simple and definitely delicious with the lemony glaze, make it before the red flag 🚩 warnings start. Lemon Madeleines with a Lemon Glaze My ten year old granddaughter Gracie loves Madeleines and every dessert baked with lemons.  So, we made a date to do some quarantine baking and she chose to make lemon glazed Madeleines for our project.  We found a recipe that we wanted to try but we didn't have the right size Madeleine pan so we improvised using 2 Swedish tart pans for the batter we couldn't fit into our pan.  The Swedish French Madeleines turned out to be our favorites and the good news was that we didn't have any problem turning out the delicate little cakes from our tart pans, as well as our heavily buttered Madeleine pan. Lemon, Chia and Ricotta Muffins I can't say chia seeds without saying chi chi chia and then pet, which has nothing to do with baking these wonderful soft lemony ricotta muffins. It has to do with those stupid chia pet commercials, who knew that you could actually bake with chia seeds, no growing long chia pet hair involved. Meyer lemons add a special lemon scent to these muffins and I've made them several times with Meyers because they're so good for baking in any recipe that calls for fresh lemon zest or juice.
