  Why make one loaf of fancy banana bread just for yourself when you can just as easily make two loaves of banana bread - enough to share with another family.  Spread the joy, especially now during COVID when we all need our days to be brightened.  After years of using the Joy of Cooking banana bread recipe which is also a very popular one I switched to making this fancier moist and delicious banana bread recipe.  To keep it interesting I do vary a few ingredients, like using chopped walnuts, cinnamon sugar, mini chocolate chips or sliced bananas on top of the loaves.  I also use different bread pans, like the ones in the above photo with the fancy ruffle edges.  The recipe makes enough for two large size 9x5" loaves so plan accordingly. banana blueberry buckwheat bread

Tired of pumpkin, cranberries or the endless nightmares about turkey roasting methods?  Ditto on the pre holiday mental fatigue, I just want fresh blueberries is often my simple request this time of year. This week before the pressure to bake with pumpkin and/or pumpkin spice on Thanksgiving take over I made banana blueberry buckwheat bread for breakfast or coffee time and I'm glad I did, because it's good.  The bursts of blueberries in this buckwheat flavored loaf reminds me of one of my favorite comfort foods, buckwheat pancakes with blueberries, applewood smoked bacon with loads of butter and maple syrup.  My banana blueberries buckwheat loaf is a sort of a refined, baked version of that over the top meltingly delicious favorite breakfast.   Everyone should have a grandmother who bakes banana walnut muffins with cinnamon sugar and mini chocolate chips, or anything with bananas and chocolate chips.  My grandkids are lucky like that but this time I baked the goods and ended up with a dozen muffins in my freezer which was great because my husband and I enjoyed them a few at a time for breakfast, sorry kids.  I particularly like this muffin recipe so I'm going to share it with all my fellow banana 🍌 baking lovers.
